Gun Lake Casino Steward Supervisor in Wayland, Michigan

SUMMARY

The Steward Supervisor is responsible for supervising kitchen employees not actively engaged in cooking to ensure all work surfaces and areas are clean in direct support of the Executive Chef and Executive Steward. The Steward Supervisor is responsible to ensure that all dishware, glassware, silverware, and service utensils are clean and properly stored in all back of the house Food & Beverage areas. They are to enforce all initiatives given, oversee their own responsibilities, and provide service to Guests and Team members in a professional, efficient and courteous manner while maintaining a clean, safe and attractive environment, in accordance with all company standards, policies, and procedures.

ESSENTIAL QUALIFICATIONS

EDUCATION

High School Diploma or GED

EXPERIENCE

One (1) year certificate from college or technical school or six months related experience and/or training. Equivalent combination of education and experience will be considered.

KNOWLEDGE, SKILLS, & ABILITIES

•Must be 21+ years of age.

•Ability to communicate effectively with Guests, Team members and Management in both written and verbal form.

•Proven ability to manage time effectively with minimal supervision.

•Requires adherence to all company and department policies and procedures as well as all the Unsurpassed Guest Service Standards of Gun Lake Casino.

•Must be able to handle a flexible schedule.

•Must demonstrate sound judgement and maturity in his or her decision-making ability, even when dealing with difficult situations.

•Must possess and demonstrate great attention to detail in order to maintain unit’s appearance and operating standards.

•Must be able to demonstrate and ensure that the department is within HACCP guidelines.

•Must ensure and comply with a safe and hazard free work environment according to the Department of Health and OSHA regulations.

DUTIES AND RESPONSIBILITIES

•Responsible for practicing, supporting and promoting Gun Lake Casino’s “Unsurpassed Service Standards” at all times.

•Ensure that all health department regulations are adhered to by all employees reporting to this position, and all kitchen areas meet established local, federal, and company established standards and codes.

•Operate commercial dish machines.

•Set up and operate a commercial pot washing area.

•Assign and efficiently schedule non-cooking Team Members to such activities as dishwashing and cleaning the kitchen.

•Inspect kitchens, workrooms, and equipment for cleanliness and order.

•Ensure that a safe and clean working area is maintained

•Ensure service ware is washed as it is brought back from all dining areas.

•Ensure all food preparation area tables, shelves, and wall surfaces are cleaned.

•Ensure that all floor areas, including walk-ins and store rooms are swept and mopped.

•Ensure that all brooms, mops, and mop buckets are properly utilized to clean floors.

•Ensure that all trash cans and dumpster areas are emptied and properly cleaned.

•Coordinate and direct the set-up of banquet functions and meetings.

•Maintain and train Team Members in correct chemical usage.

•Assist in establishing, administering and evaluating department policies and objectives, including standards of performance.

•Assist in hiring, training, counseling and evaluation of department Team Members.

•Directly supervise kitchen workers in the Food & Beverage department.

•Attend daily Team Member Huddles and look at the communication boards for pertinent information.

•Must possess the ability to work hands-on in any kitchen environment pertaining to a three-meal period and high volume productions related to, but not limited to ensure all china, glass and silverware, flatware, dish machines, etc. are cleaned and maintained according to Gun Lake Casino’s standards and specifications.

•Ensure that all caution/safety makers are displayed properly.

•Clean and stock the Team Dining Room.

•All other duties as assigned from the Executive Steward.

PHYSICAL REQUIREMENTS

•Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters, numbers and symbols.

•Ability to lift up to 50 lbs., push 150 to 250 lbs. on a pushcart and enter walk-ins of -10 degrees to 140 degrees with or without assistance.

•Ability to stand for duration of shift, walk frequently, bend and reach to a height of 6 feet with or without assistance.

•Requires hand/eye coordination, the normal sense of smell, taste, touch and sound.

WORK CONDITIONS

Work is typically in an area which may be unusually hot, cold, noisy, and may contain smoke. Work may be performed in small areas with a 3 ft. wide access. Tasks performed from a non-sitting position. Team Members will be required to stand, walk, lift, reach, push, pull, grasp and navigate safely on potentially slippery floors. These tasks include the maintenance and care of assigned area. Work may entail trained chemical usage. While performing the duties of this job, the Team Member is regularly exposed to wet and/or humid conditions and moving mechanical parts. Constant contact with fellow Team Members and Guests.
